Chicken Cordon Bleu Pasta

You read that correctly, chicken cordon bleu pasta! Normally, I'm not a big fan of ham. Bacon, yes, bacon and I are best friends. But ham is definitely an outsider on my menu. But when I stumbled across this recipe, I knew I had to try it because chicken cordon bleu is one of my all time favorite meals.


Chicken Cordon Bleu Pasta

What you'll need:
1 pound pasta (I use penne or rigatoni)
1 cup chicken breast, cooked and cubed
1 cup ham, cooked and cubed
1 1/2 cups milk
8oz cream cheese, softened
2 tbsp dried minced onion
2 cups shredded swiss cheese
Salt and pepper
Cayenne pepper
1 cup Panko crumbs
1/2 cup butter, melted

Prep:
Cook pasta according to box directions. Drain and return to pot. Add chicken and ham, toss to combine.

Preheat the broiler. In a medium saucepan, combine milk, cream cheese and minced onion over a low-medium heat. Cook, stirring frequently, until smooth. Stir into pasta. Add shredded cheese and stir til combined, seasoning with salt and pepper to taste.

Transfer mix to baking dish and top with Panko crumbs. Pour melted butter over crumbs and broil til browned.

  2. I usually add some when I'm cooking the chicken, then add some more to the sauce because I like a little kick to meals like this.
