Sweet & Spicy Bacon Chicken

Now that my husband is FINALLY home from another deployment, I can start cooking again! This was one of the top things I wanted to try because it combines two of my favorite things to cook with: bacon and chicken. I was pleased with the result, as was my husband, but the next time I make it I will be adding some cayenne pepper to really give it a kick to go with the sweetness of the brown sugar coating. 


Sweet & Spicy Bacon Chicken

What you'll need:
Chicken breasts (cut breasts in thirds to make thicker strips)
Bacon (not cooked)
Salt and pepper to taste
Garlic powder
Chili powder
Brown sugar

Preparation:
Season chicken with salt, pepper, garlic powder and chili powder (the way I use is to put the strips in a tupperware container, put spices in, seal the container and shake well to cover the strips). Wrap a piece of bacon around each piece of chicken, you can secure with toothpicks if you want. Then roll in brown sugar. Place in a greased oven-proof dish and bake at 400 for 30-40 minutes. You can also grill them if you choose, they're great either way!

I had trouble deciding what side dish to put with this chicken, and in the end decided on loaded baked potato mashed potatoes. If you baked the chicken, save the bacon drippings from the pan and pour some on the mashed potatoes (it was SOOOOO GOOD!!!)
