Repost: Brownie Cookies

The Marine Corps ball is coming up in a couple weeks. We're excited to go this year as we haven't been to one since 2009, for the past 2 years my husband has been deployed during ball season. Along with that excitement goes dread, as we haven't been to a ball since 2009 my husband's dress blues haven't been updated since 2009. Back then, he had only been in the fleet for a year, was a Lance Corporal and only had one deployment under his belt. Now, he's a Corporal and has been on two more deployments. After all the medals, ribbons, a new uniform, tailoring for a new uniform, all the extras for his uniform, my dress, and tickets, our ball costs are up to about $700! UGH! $700 that could have been used for our PCS in a couple months. It's so hard to see that money just fly away and be used for one night, and we can't just say we're not going. Unless he's deployed or we're out of town, we are required to attend the ball. So, we're sucking it up and pinching some pennies so the ball doesn't bankrupt us. Which means we're going without foods that while we don't need, we definitely crave! Last night we thought about Jack in the Box tacos for a while, wanted to go get them, but we just didn't. Yeah I know, sad right? Haha I know it's not a life problem, it's just how we are. We're fatties, we love food and we don't like going without it.


So I'm baking him up a surprise today because we could both use a pick-me-up! I posted this recipe a while ago during his last deployment, I baked and sent him these cookies and apparently they were gone pretty fast. Success! And I just happened to have 4 eggs left in my fridge, definitely a sign that I was meant to make these today. I just pulled the first batch out of the oven and they smell like heaven! Even though it's all from scratch, the ingredient list and the work involved is minimal. So these delicious bites taste amazing and you feel awesome because it was hardly any work at all! Enough talk, let's see 'em :D



What you'll need:
1/2 cup butter
4 squares (1 oz) unsweetened chocolate, chopped
3 cups semisweet chocolate chips, divided
1 1/2 cups flour
1/2 tsp baking powder
1/2 tsp salt
4 large eggs
1 1/2 cups sugar
2 tsp vanilla extract

Prep:
Combine butter, unsweetened chocolate, and 1 1/2 cups chocolate chips in a large saucepan. Cook over low heat, stirring frequently, until butter and chocolate are smooth. Combine flour, baking powder, and salt in a small bowl; set aside. Beat eggs, vanilla, and sugar at a medium speed with an electric mixer. Gradually add dry ingredients to egg mixture, beating well. Then add chocolate mixture and beat well. Stir in remaining 1 1/2 cups chocolate chips.

Scoop dough onto baking sheet, 1" apart. Bake at 350 for 10-12 minutes. Cool slightly on baking sheets, then remove to wire rack to cool completely.
