Brownie Cookies


It can't be denied that two of my, and of course my husband's, favorite treats are brownies and cookies. I love chocolate chip cookies and you can't beat a thick, fudgy brownie and a tall glass of cold milk. So when I stumbled across this recipe on Pinterest, my immediate thought was, "I need to try these before my husband gets home!" He's deployed at the moment, but very close to being home, and when he's deployed I don't cook for myself. I'm used to making things for two people so cooking for one isn't something I've mastered, although I should considering this is our 3rd deployment in as many years. But Lean Cuisine has been nice enough to cook for me 90% of the time. I do miss the kitchen though and when he gets home, I'll be back to making all sorts of yummy things for him to drool over, including these absolutely sinful and amazingly awesome brownie cookies!



Brownie Cookies

What you'll need:
1/2 cup butter
4 squares (1 oz) unsweetened chocolate, chopped
3 cups semisweet chocolate chips, divided
1 1/2 cups flour
1/2 tsp baking powder
1/2 tsp salt
4 large eggs
1 1/2 cups sugar
2 tsp vanilla extract

Prep:
Combine butter, unsweetened chocolate, and 1 1/2 cups chocolate chips in a large saucepan. Cook over low heat, stirring frequently, until butter and chocolate are smooth. Combine flour, baking powder, and salt in a small bowl; set aside. Beat eggs, vanilla, and sugar at a medium speed with an electric mixer. Gradually add dry ingredients to egg mixture, beating well. Then add chocolate mixture and beat well. Stir in remaining 1 1/2 cups chocolate chips.

Scoop dough onto baking sheet, 1" apart. Bake at 350 for 10-12 minutes. Cool slightly on baking sheets, then remove to wire rack to cool completely.
