Spinach & Artichoke Dip
- 1 small onion, chopped
- 1 garlic clove
- 1 pkg. frozen spinach
- 1 can artichokes, drained
- ½ c. Parmesan cheese
- ¾ c. Monterey Jack cheese
- 1 c. chicken broth
- 1 tsp. olive oil
- ¼ c. cream
- ¼ c. sour cream
- Salt
Preparation:
Brown chopped onions with olive oil in a medium saucepan; add spinach and chicken broth. Simmer till spinach is completely thawed (about 5-10 minutes). Add chopped artichokes, then stir in Parmesan and Monterey Jack cheeses over a low heat. Add the cream, sour cream and salt to taste. Should be served hot with tortilla chips.
